Chilean BBQ marinade

I hope you are having wonderful week. This is a quick, little post for all the meat lovers out there!

I know it’s still a while before we can dust-off our barbeques, but since I’m spending time with an out-of-this-world Chilean cook, Toni, I thought I should take advantage of this….and snatch another one of her delicious recipes!!

The result is a wonderfully seasoned, tender, and juicy steak!

Chiliean BBQ marinade
-This ‘marinade’ is more of a wet spice rub keep reading to see what I mean….

Ingredients:

3 kg beef, preferably boston steak or top butt*
1/4 c. vinegar
1/4 c. water
6 garlic cloves, minced
2 tsp cumin
1 tsp paprika
2 tsp marjoram
salt and pepper

Mix water and vinegar and sprinkle over meat. Then, in a small container or bowl mix garlic, cumin, paprika, pepper, and marjoram. Spread this rub on the meat, make sure to massage it well into every part of your luscious and thick steak. Cover the meat and let it marinate for at (the very) least 30 min, or better overnight! Salt the steak before putting it on the sizzling, hot grill.

*If you want to use this marinade for pork, just replace the marjoram for a dried chile paste or powder, such as aji en polvo.

Hmmm….Who doesn’t want the warm weather to be back?
