Hope your weekend has been wonderful! The sweet tartness of this confit creates a beautiful contrast against decadent foods such as foie gras, mousse de foie de volaille, or a juicy steak.
It is delighftul with rich creamy cheeses.

Red Wine Onion Confit
Ingredients:
1 1/2 medium onions, thinly sliced
1 tblsp. butter
1 c. red wine
1/2 c. stock
2 sprigs of thyme
2 whole all spice berries
1/4 tsp. sugar
salt & pepper
Heat a pan over medium heat and add butter. Once the butter is completely melted add the onions, sugar, salt, pepper, all spice, and thyme sprigs. Stirring occasionlly, cook until onions are soft but not brown, for about 20 min. Reduce heat to medium-low if necessary.
Deglaze with red wine and stock, and simmer until the liquid is almost completely reduced.
Taste and rectify the seasoning. You can serve it warm or at room temperature. This can be made days ahead and stored in the refrigerator for at least a week.
